More about the farm...

We’re proud to offer this Exotic Microlot from Colombia, Paola Trujillo farm.

It comes in 150gr tin and each individual coffee tin is roasted individually on our Roest L100 sample roaster using Light & delicate roast profile. This helps us roasting this delicate coffee on demand, making sure it’s roasted consistently up to highest standards ready for you to enjoy it to its full potential. Best brewed as pourover technics.

This coffee was grown by Paola Trujillo at the farm Patio Bonito. This

coffee is harvested following strict ripeness criteria, floated and hand-

sorted to remove any defects. Cherries were then exposed to 30 hours

of underwater fermentation before being pulped. The parchment was

then gently washed and then dried in temperature controlled conditions

until ideal moisture content was achieved.

Sidra is a hybrid between Bourbon and Typica varieties. Its sweet and

bright profile is a characteristic of this unique variety, said to have

originated in Ecuador. Sidra’s height is medium, the yield is high, all

the cherries ripen to be red, and the trees are tolerant to leaf rust and

drought but are susceptible to pests.
