This coffee was grown by Jairo Arcila at the farm Santa Monica. The coffee was exposed to a dry anaerobic fermentation period of 72h with the pulp on.

During this fermentation stage, Strawberries & wine yeast  were added, placed amongst the green coffee until ideal moisture content was achieved.

This microdot is 100% Pink Bourbon. This Varietal is currently under research in order to determine its origin, Its said that it is a mutation that took place at 2100masl in san Adolfo , Huila.
