More about the farm...

This coffee was grown by Jairo Arcila at the farm Santa Monica. The coffee was exposed to a dry anaerobic fermentation period of 72h with the pulp on.

During this fermentation stage, Green Apples & wine yeast  were added, placed amongst the green coffee until ideal moisture content was achieved.
